BerryMisu (a berry tiramisu)

Everyone knows how much I live the flavor of coffee and well tiramisu is a regular go-to for anyone who loves coffee and dessert. But what if you don’t like coffee? Then what do you do?

Well a BerryMisu is your answer! It’s creamy, tangy, sweet, and just super delicious. It’s basically a tiramisu but instead of dipping the biscuits in coffee, your dipping them in a berry coolie (compote) and adding extra strawberries inside to heighten the flavor some more.

It’s finger lickin good! 🍓🍓🍓 And easy!!! If you want to bake your biscuits you can, I’ve added the link to the recipe but otherwise no need. Just buy them in the store, and whip up the rest and as they say ’Bobs your uncle!’

On a note: the longer you keep it in the fridge (recommended is min. 4 hours) the softer the biscuits get and they soak up all those yummy berry flavors!). So if you can, which I couldn’t 🙈, but if you can then wait. Because it’s worth it!

Here’s how you bake it!

INGREDIENTS :

  • 2 cups frozen berries (I used raspberries, blue berries and strawberries)
  • 1/2 cup fresh berries, cut into small pieces (I used only strawberries, but you can add whatever you like)
  • 1/2 cup sugar
  • 1/4 cup water
  • 1/4 cup orange juice
  • 28 soft ladyfingers (you can buy them or bake them yourself – click here is the recipe if you want to bake yourself)
  • 1 cup whipping cream
  • 1 tub mascarpone (I used the brand galbani which I got from smakbox, and my tub was 250g)
  • 1 tsp vanilla extract
  • Freeze dried berries , crushed into powder for the topping (OPTIONAL)

METHOD :

  • Start by grabbing a square dish/pan. (I lined mine with parchment paper because I wanted to serve the cute pieces separately on a platter. But you can just serve it from your dish if you wish.
  • Then in a small sauce pan over medium heat, add in the frozen berries, water, sugar and orange juice. Once all the berries are soft and mushy, strain them through a strainer into a clean bowl, and pour back into the sauce pan. Bring to a boil, for about 5 min until it thickens. Then let it cool in the fridge till room temp.
  • While it cools, make your cream. In a medium bowl, whip up your cream until thick strong peaks. Then add in your mascarpone (whip it a little before so it’s easy to mix in it) and add in the vanilla. Whip u til thick and set in the fridge until time to use.
  • Grab your dish/pan and take a ladyfinger at a time and dip one side into the berry sauce and place onto the dish. Do so until the bottom layer is covered with your ladyfingers. You may need to break some in half to make them fit right.
  • Then using a brush, brush on top of the ladyfingers some more sauce and then spread half of the cream on evenly.
  • Spread the chopped berries on top and drizzle a bit more sauce. Then grab the remaining ladyfingers and repeat the same by taking one at a time, dipping in the sauce and place on top of the berries. Cover it all and then brush the remaining suave all over. Spread the remaining cream and dust with powdered freeze dried berries (optional) or fresh fruit.
  • Let it sit in the fridge for a min. Of 4 hours before eating so the biscuits have time to soak in the berry flavors. Best results are next day!
